Easy Christmas sugar cookies

Fill your home with the scent of freshly-baked cookies with our quick and easy Christmas sugar cookie recipe. 

Make them as Christmas gifts or just to curl up on the sofa with a hot chocolate and your favourite Christmas movie!

Ingredients

  • 170g unsalted butter - room temperature
  • 150g caster sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 280g of plain flour (with a little extra for rolling)
  • 1/2 tsp baking powder
  • Pinch of salt
  • Sprinkles!

Method

  1. Preheat your oven to 175°C.
  2. Cream together the butter and sugar, using an electric mixer, until creamy and pale
  3. Add the egg and vanilla extract and mix to combine
  4. Add the flour, baking powder and salt and mix gently until a soft dough forms - do not over mix.
  5. Chill you dough in the fridge for 30 minutes or more, if you have time.
  6. Roll your dough to approximately 0.5cm thickness
  7. You can either choose to ice them once baked and cooled, or for a quick and simple decoration, scatter sprinkles across your rolled dough and press in.
  8. Use your favourite cookie cutters to cut out the biscuit shapes and place them on a lined baking tray
  9. Bake for 12  minutes or until the edges are lightly browned.
