Easy Christmas sugar cookie recipe
Fill your home with the scent of freshly-baked cookies with our quick and easy Christmas sugar cookie recipe.
Make them as Christmas gifts or just to curl up on the sofa with a hot chocolate and your favourite Christmas movie!
Ingredients
- 170g unsalted butter - room temperature
- 150g caster sugar
- 1 large egg
- 1 teaspoon of vanilla extract
- 280g of plain flour (with a little extra for rolling)
- 1/2 tsp baking powder
- Pinch of salt
- Sprinkles!
Method
- Preheat your oven to 175°C.
- Cream together the butter and sugar, using an electric mixer, until creamy and pale
- Add the egg and vanilla extract and mix to combine
- Add the flour, baking powder and salt and mix gently until a soft dough forms - do not over mix.
- Chill you dough in the fridge for 30 minutes or more, if you have time.
- Roll your dough to approximately 0.5cm thickness
- You can either choose to ice them once baked and cooled, or for a quick and simple decoration, scatter sprinkles across your rolled dough and press in.
- Use your favourite cookie cutters to cut out the biscuit shapes and place them on a lined baking tray
- Bake for 12 minutes or until the edges are lightly browned.
